French Pear Clafouti

A good cup of cappuccino, a recipe that tastes like custard and a pancake. A house that smells like warm vanilla sugar = perfection! This is one of my FAVORITE desserts/breakfasts/mid-day snacks/anytime of the day things to make.

You can substitute peaches, plums, berries or apples for this recipe, but the pears complement the custard perfectly. When you taste this fresh from the oven, the pears almost “melt” into the batter and add to the smooth, rich taste. Make sure you don’t skimp on the powdered sugar topping! 🙂 Sidenote: I ended up pulling my clafouti out of the oven and eating half of it without even noticing. I just kept going back for a second piece. I asked everyone else in  my house if they tried it and was surprised to learn I had eaten pretty much all of it on my own. You’ve been forwarned!


What You Need:
1T butter, room temperature
1/3C granulated sugar, plus 1T for sprinkling pan
3 large eggs, room temperature
6T all-purpose flour
1 1/2C Heavy Cream
2tsp vanilla extract
1tsp grated lemon zest
1/4 tsp salt
3 ripe Bartlett pears (or more…it’s up to you how much fruit you want to taste)
Powdered Sugar, for topping

Make It:
1. Preheat your oven to 375*F. Butter a 10 by 3 inch round baking dish and than sprinkle it with 1T granulated sugar.
2. Beat the eggs and 1/3C granulated sugar for about 3 minutes. On low speed, mix in the flour, heavy cream, vanilla extract, lemon zest and salt. Let sit for about 10 minutes.
3. Peel and slice your pears. Arrange them, slightly fanned out, in the baking dish. Pour the batter over th pears and bake until the top is golden brown – about 35-40 minutes.
4. Take out of the oven, sprinkle with powdered sugar and serve it up!
