Tilapia with Fresh Tomato-Olive Salsa

You’ll Need:
2 Tilapia Filets
1C fresh tomatoes, diced
1C green olives, roughly chopped
2T fresh parsley
1T fresh basil
1 tsp fresh oregano
1T Cajun Seasoning (I like the one by Whole Foods)
Olive Oil Spray
Make It:
1. Place a sauté pan over medium heat and spray lightly with olive oil. Add your diced tomatoes, olives, fresh parsley, basil and oregano. Stir and let cook for a few minutes. Place in a separate bowl to cool.
2. Spray pan with some more olive oil. Season tilapia with the Cajun spices. Sautee tilapia for about 6 minutes on each side over medium-high heat. Be gentle – it breaks up easily!
3. Serve tilapia with the salsa on top. I like to use Near East pine nut couscous with some lemon squeezed on top as my side dish. Enjoy!
