2 cucumbers, julienned
1C shredded carrots
1 yellow bell pepper, julienned
Small red onion, julienned
2 oranges, segmented + about 1T of OJ
2T red wine vinegar
Olive oil, dash for salad & for cooking scallops
1lb scallops
Chili paste, 1T
Mix of fresh herbs (I used basil, parsley, oregano, dill & mint)
Make It:
Toss all the veggies & oranges with red wine vinegar, OJ & olive oil. Set aside.
Season scallops with salt & pepper, add fresh herbs and chili paste. Preheat olive oil in a pan and sear the scallops on each side (about 6 mins per side). Don’t overcook the scallops! They’ll get chewy…just a nice quick sear.
Top the salad with the scallops and enjoy!
*My other half haaaaates scallops, but I made this and he said “ohhh… I love scallops!!!” I’ve had them in restaurants (esp Italian restaurants for some reason) where they’re not cooked properly. They should have a very sweet taste and soft texture. And this recipe us super healthy!
