Homemade Pizza with Arugula and Mozarella

I’ve made pizza hundreds of times loads of different ways. This is probably the easiest version packed with the most flavor. It’s still something I’m trying to master so I practice whenever I have the chance. Believe it or not, this is a VERY quick weeknight meal. I keep homemade dough in my freezer or fridge but feel free to use store bought. My favorite is Trader Joe’s, the one from Wegmans takes a lot longer to rest and tends to be harder to work with…but experiment with it!

YOU’LL NEED:
1 bag pizza dough, cut in half and rested according to package (or homemade)
1/2C Fresh buffalo mozarella, patted dry
1/2C fresh arugula
1/2C crushed San Marzano tomatoes
Crushed red pepper, a generous sprinkle
Flavored olive oil (basil or rosemary work great)

Make It:
Preheat oven to 450*F. Coat a pizza pan with olive oil and flour. Roll out your dough until thin. Ok, I guess I’ll give up my secret. I don’t use a rolling pin, toss it, etc…I use…a huge can of protein powder. Yup. Over the years, it has always produced the thinnest crust.

Place on the pizza pan. Top with sauce, crushed pepper and cheese. Bake 15 minutes.

Top with arugula, a drizzle of olive oil and a pinch of salt. Perfection! 😉
