Garden Lettuce tastes better plus has a higher vitamin content than what you purchase in the grocery store. I grow romaine lettuce, red lettuce and kale. Also, it doesn’t require a lot of maintenance besides watering! I cut the lettuce with kitchen shears and pair it all summer long with my Dijon Vinaigrette and locally grown tomatoes. I love this vinaigrette because (besides being super easy to make) it matches up with any vegetable, in a pasta salad or as a marinade on any protein. I even like to dip bread in it (crunchy ciabatta or French bread). It’s amazing all summer long.
Mise en place for dinner – this is the kind of stuff I LOVE making the most (bright, bold fresh summer food)! I made salmon with a brown sugar rub, than topped it with grapefruit. Cauliflower with gremolata (lemon juice, zest, parsley and garlic) and a crunchy salad with my Dijon Vinaigrette.
The key here is to not use any substitutes for the mustard – it has to be “Dijon!” Wine is the prominent ingredient making it sharp, spicy and bold in taste.
You’ll Need:
Garlic, 2 cloves crushed
3T Dijon Mustard
3T Fresh Lemon Juice
¼ tsp Black Pepper
¼ tsp Himalayan salt
5T, EVOO
3T, Champagne Vinegar
Make It:
Combine all ingredients in a bowl, stir with a whisk or fork until it turns into a thick dressing. Enjoy!
