Mini Raspberry Beignet Donuts 

Pillowy soft and slightly chewy, the texture of these are reminiscent of a beignet. This yeast version is more airy than it’s cake-based sister. I stuffed them with organic raspberry jam and Nutella but I’m thinking that for the next round a cannoli filling with mini dark chocolate chips would be a match made in heaven.

You’ll Need:

2 packets of active dry yeast (2T)

1/2C lukewarm water

1/3C white sugar for dough, 1T sugar for yeast, plus more for dusting

2 1/4c all purpose flour

3 egg yolks

2T butter, room temp

1/2 tsp salt

3C vegetable oil

1c Raspberry or Cherry Jam, in a piping bag

1c Nutella, in a piping bag

Let’s Make It:

1- Place water in a small bowl, add yeast and 1T sugar. Stir. Let sit 15 mins until super foamy on top.

2 – Place flour in a very large bowl. Add egg yolks, sugar, salt, butter and your yeast mixture that has foamed up. 

3 – Stir by hand with a wooden spoon until a dough starts to form. Work it on a board until fully incorporated and you have a smooth not sticky dough. Feel free to use the dough attachment in your mixer (I don’t have one so we’re keeping it rustic over here).

4 – Swipe your bowl with oil. Place your dough inside. Cover with plastic or a blanket (kitchen towel). Let your baby dough take a nap for 1 1/2 hrs.

5 – Wake up dough! Roll it out to about 1/4 in thick. Using a biscuit cutter, cut circles out of all the dough. Save any scraps and roll them into balls (you can fry them as little donut poppers with dipping sauces on the side). Place your dough circles on a baking sheet. Cover with a towel. Take anothe 15 min nap.

6 – Heat your oil (I use vegetable or peanut). If you don’t have a thermometer, the oil is ready when you stick in the bottom of a wooden spoon and it boils around it – you’re ready to roll! Drop in your dough, no more than 4 pieces at a time or your temperature will drop very quickly.

7 –Drain on paper towels (not a cookie sheet, the doughnuts will just sit there and absorb the oil if you do this – not a good look!) While still hot, dip in sugar. 

8 – Pipe them up! Poke a hole with a fork or skewer, pipe with your jam or Nutella and all of your hard work…has paid off! I think you deserve a doughnut 🙂
