When you’re searching for a quick, homemade cookie to satisfy your sweet tooth these will be your “go to” recipe. The combo of chewy & crunchy with the bold almond flavor make these a staple when paired with coffee / espresso.

3C almond flour
2/3C white sugar
1/2C powdered sugar
1 pinch, salt
2 egg whites
1 tsp almond extract
Let’s Make It:
1 – Mix dry ingredients.
2 – Add wet ingredients, stir with a spatula until it comes together (use your hands at the end to form a dough and flatten into a disk). Let chill out in the fridge for one hour.
3 – Roll dough into balls (1T in size). Dip balls into bowl of powdered sugar.
4 – Bake at 325* for 20-25 mins until cookie tops crack a bit. Let cool for about 10 mins on a baking sheet (they’ll be crumbly if you eat them right away, I know more than anyone else…the struggle is real in practicing patience after baking cookies, but these are WAY better once they cook off a bit and even better the next day!!)
