Cauliflower Veggie Fried Rice 

Zucchini noodles and spaghetti squash are favorites of mine but when cooking for others…let’s just say those aren’t exactly dishes that the crowd goes wild for. This was extremely popular and nobody could guess that there was no rice involved. It’s one of my favorite lunches. I hope you can make it for your friends and family and they enjoy it just as much too!



You’ll Need:

1 cauliflower (riced in a food processor OR skip the extra clean up and buy cauliflower rice in the produce section of your grocery store)

1 onion, diced

1/2C each of your favorite fried rice veggies: I used carrots, brussel sprouts and peas

2 eggs, cooked/scrambled and set to the side

Scallions, to garnish

Sauce~

1/4C soy sauce (I use Tamari)

1T brown sugar

1tsp chili garlic sauce

Make It:

1- Sautée your veggies in oil about 5 mins on high (evoo works just fine). In a small bowl, make the sauce while your veggies cook by mixing all sauce ingredients.

2-Stir the rice in with veggies and cook another 5 mins. Pour your sauce on top.

3-Stir in eggs. Garnish with scallions & enjoy!
