If I could do a one pot meal each night, I definitely would! Not only is this a total timesaver but it packs some serious flavor. I use my homemade blend of Cajun seasoning (never buy the premade junk at the store). And in just a few steps you’ll have this delicious healthy home cooked meal on the table for your family! I know most versions use sausage and shrimp but we’re keeping it super simple and laid back over here. Check out the video tutorial over on my YT page!
You’ll Need:
1 lb chicken, cut into cubes and seasoned with S&P
1 onion, diced
3 sweet bell peppers, diced (I use a Red, Orange & Yellow)
3 celery stalks, diced
1 *14 oz can fire roasted tomatoes
4 bay leaves
5 garlic cloves, crushed
1T Worcestershire sauce
1 1/2C brown rice
Cajun Blend: 1 tsp each of cayenne, paprika, oregano, thyme plus a little pinch of S&P
Fresh parsley, optional
Make It:
1- Sautée your onions, peppers, celery and garlic in a splash of olive oil.
2- Add chicken and cook through. Add your Cajun blend and cook for another minute.
3- Add broth, tomatoes, Worcestershire, bay leaves and rice. Bring to a simmer. Cover and cook minimum of 40 mins. Keep coming back to stir so your rice doesn’t stick.
4- Garnish it up with a bit of fresh parsley and enjoy!
