Spring Minestrone Soup | Budget Bites Episode #2

Sometimes you just need a super easy recipe to avoid getting fast food! Not only can you throw this together with ease but it’s under $12! Feeling really hungry?! Throw in some rice or pasta that you already have in your cabinet.

You’ll Need:

1C leeks, chopped

1C carrots, chopped

1C fresh green beans, chopped

1C cherry tomatoes (keep them whole)

1C red potatoes, chopped

5 garlic cloves, crushed

4C chicken stock (use the salted one here for more flavor) + 2C water

S&P, dash and more as needed

Garnishes: fresh parsley or dill, lemon juice, parm reggiano

Optional: Crisp, buttered bread on the side

Olive oil or butter, 2T to sautee 

Make It:

1- Sautee leeks in butter or olive oil. Add garlic and sautee another minute.

2- Add all veggies and sautee until tender, about 10 mins.

3- Add your chicken stock and simmer 30 mins.

4- Garnish with lemon juice, fresh herbs and parm reggiano. Serve with your favorite bread swiped with butter and crisped up in the oven.
