Fajitas with Apple Cider Vinegar

I really think my signature dish is fajitas. Sometimes I crisp up the tortillas so they’re charred, other times I top them with shredded cheddar / Monterey Jack until slightly melted and keep them soft. But the one thing I never skip is the apple cider vinegar. I know it sounds odd, but I swear by it! Once the ACV combines with red onions it creates a caramelized flavor that could easily make it a side dish on its own. Instead of carb filled rice, I opt for a fresh veggie that’s on sale (asparagus in this case). It’s also a really cheap dinner with ingredients that you don’t even have to write down, not any measuring here. Here’s your steps:
