Strawberries. They boost your immune system, regulate blood pressure, reduce stress, promote healthy skin & teeth, aid in digestion and keep your bones healthy! Naturally sweet and juicy, is there any better complement to fresh cream and sugar?! FYI – I used the leftover cream/yogurt/honey mixture to make an Oven Puffed Pancake
You’ll Need:
2C fresh strawberries, cubed tiny
1T sugar
1C light cream
1C strawberry yogurt
1/4C honey
Make It:
1- Sprinkle the sugar over your strawberries. Let sit for 20 minutes so the juices start to come out.
2- In a mixing cup, whisk the cream, yogurt and honey.
3- Place strawberries in each popsicle mold. Push them down and fill them as much as possible. Pour the cream mixture on top. Add more strawberries and push down. Place the sticks in and slam them down on the table a few times (gently) to make sure the cream is evenly distributed.
4- Freeze for a minimum of 8 hours (overnight is the best) I know it’s hard to wait, but if you check too early your popsicle sticks won’t stay in the mold. Enjoy all summer long as an easy and rich dessert.
