You’ll Need:
4C baby kale, triple washed
1C cucumbers, sliced into moons
1 avocado, cubed
1/2C red seedless grapes, sliced
2C rotisserie chicken, cubed
1/2 of a red onion, diced
1C broccoli and cauliflower, diced very tiny
The Dressing:
1/4C apple cider vinegar
1T dijon mustard
2 garlic cloves, crushed
1/2C extra virgin olive oil
fresh ground black pepper & pinch of sea salt
~Mix all ingredients with a whisk
Make It:
Combine all of your ingredients and top with dressing as desired! I make this salad a few times a week for lunch. I often swap out the chicken for filling garbanzo or cannellini beans instead. Serve it up with a big slice of lemon for a citrus punch and extra detox power!
