What you need:
– Red Velvet cake mix, 1 package
– Instant chocolate pudding, 1 3.9 oz package
– Cream Cheese, 8 oz.
– Butter, 1/2C (room temperature)
– Powdered Sugar, 4C
– Cool Whip topping, 1C
– Toppings: white chocolate shavings or strawberries
1.Make the cake batter according to the directions on the back of the package. Than, add the pudding mix into the batter before spooning into cupcake tins and baking according to package directions.
2.Make your frosting while the cupcakes bake: beat cream cheese and butter until well blended. Gradually beat in sugar. Whisk in Cool Whip. Refrigerate until ready to use.
3.After the cupcakes have cooled, grab a spatula and top them with a generous scoop of frosting. Finish with a fresh strawberry, shaved white chocolate or other topping of your choice!
