Salsa:
2C peaches, diced
1 red bell pepper, diced
1/2C fresh arugula
1 lemon, juiced
2T fresh oregano, chopped
¼ tsp salt
1 poblano pepper, diced and seeded
1 garlic clove, minced
Fish:
2 salmon filets
2T lemon juice
1 tsp paprika
Pinch, salt & pepper
1. Combine all salsa ingredients and let sit for 30 minutes.
2. Prepare grill or broiler. Combine lemon juice, paprika, salt & pepper. Add salmon and marinate for 10 minutes.
3. Remove salmon from the marinade and broil; sprinkle with salsa and serve
