I picked the wrong time to diet when I created this pizza because I could’ve easily let one slice turn into six. The best part about this budget meal is it’s definitely a two in one…the chicken will have some leftovers so if you want to be a bit healthier, eat the chicken on a lettuce wrap and let the rest of your family indulge. I like options when I’m making dinner! I use Stubbs BBQ sauce it’s very smoky and I found it’s not quick to caramelize so it’s absolutely perfect for a pizza to keep from getting dry. You’ll Need:
Pizza dough, one ball for one pizza rested at room temp for 1 hour minimum
BBQ sauce, 1/2C for chicken & 1/2C for pizza
1C shredded mozarella cheese
1 lb boneless skinless chicken
1 red onion, chopped (we’ll use half for our chicken, the other half to top pizza)
1/4C apple cider vinegar
5 garlic cloves, whole
Parsley for garnish, optional

Make It:
1- Preheat oven to 500*F. Season chicken with S&P and place in a large pot. Add half of the red onion, the apple cider vinegar, garlic and 1/2C BBQ sauce. Add a splash of water just to cover the chicken. Simmer on medium high until chicken is fully cooked.
2- Keep that delicious sauce, shred your cooked chicken than add it back to the sauce. Stir to cover completely. Set aside.
3-Press out your pizza dough to fit your pan. I line my pan with my parchment to avoid any sticking, you could also do some olive oil and cornmeal.
4- Layer it up: 1/2C BBQ sauce, cheese, handful of chicken, remaining red onions. Bake for 10 mins until cheese is bubbling and crust is slightly golden.
5- Garnish with fresh parsley and dig in!
